Did you know that Kefir can be both dairy and non-dairy based (water kefir)? The beneficial bacteria (cultures) of the two types consume different sugars - lactose in dairy or fructose/glucose in water kefir. The benefits for your gut flora are great in both cases, but with water kefir you can also go without casein, without parasites and all the additional residual 'stuff' that comes with non-organic dairy (hormones, antibiotics, vaccines, pesticides, gm-corn, etc). And somewhere there will be one less calf taken away from his mum and her milk won't be used to manufacture inflammatory products for primates who walk on two feet. Nice deal all around!
